Recipe: Quick and Easy Tacos

Taco’s loaded with love!

Who doesn’t love tacos right?  The problem is, most tacos that you buy at resteraunts are made from unhealthy GMO induced corn and cooked in dirty corn oil. Then they skimp on all the good stuff inside. So, next time you get a taco craving, or have company coming over, try these. No one will be left disappointed. They are also great for a post workout meal to feed your body everything that it needs.

Feel free to use any meat, but for this recipe we will be using Organic Ground Beef. It is recommended you prep all ingredients prior cooking.

Approx Prep Time: 10 min

Approx Cook Time: 25 min

Serves: 4

Approx 200-300 cal/Taco (depending on your toppings)

Ingredients as follows:

  • 1 lb Organic Ground Beef
  • Earths Best Blue Corn Tacos Shells (or organic if you can find)
  • 2 Roma Tomatoes (diced into small pieces)
  • 2 cloves Garlic (mince or crush before adding)
  • 1 tbsp Chili Powder
  • 1 tbsp Cumin Powder
  • 1/2 tsp Salt
  • Guacamole (homemade preferred)
  • Salsa (homemade preferred)
  • Shredded Cheese (the less the better)
  • 1 cup chopped Spinach
  • 1 cup Water

Step 1. Brown your ground beef in a skillet over medium heat. While cooking, make sure you are chopping the gound beef up into fine pieces with your spatula. The finer the better. Once the pink has just gone away(important not to overcook during browning), take off the burner, and drain all the fat out into a jar. Place meat back on burner and add the water, cumin powder, chili powder, minced/chopped garlic and salt (feel free to add salt if the taste isn’t strong enough for you). Bring contents to a boil, cover with lid, reduce heat to low (2-3)to simmer in the flavor. You can simmer as long as you would like. The longer the better, but no more than 20 minutes. Preheat your oven to 300f.

Step 2. While meat is simmering, place the tomatoes, salsa, cheese, guacamole and spinach onto your serving area. Watch meat while so that you get it just as the water is about gone. You want to still leave a little so the meat remains moist.

Step 3. Once you have everything ready, and oven is preheated, place 2 taco shells/ person in oven directly on middle rack for 5 minutes. Remove and place onto individual plates.

Step 4. Place Beef inside taco shells, then top in this order: cheese( the less the better), guacamole, spinach, tomatoes and top with a tbsp of salsa. Make sure to add extra spinach! After all, it worked for Popeye, right?

Step 5. Sit down with a 16 oz glass of water and ENJOY.
